Winemaking

From vineyard to bottle

Harvest

Harvested in first 10 days of October. Early morning harvest, followed by gentle pressing of the bunches; cold static clarification; fermentation at a temperature between 14°C and 16°C, then controlled chilling below 10°C to block and prevent malolactic fermentation. “Sur lies” with weekly bâtonnage for over 4 months.

Barrel

Aged in 2.25 hl first-passage French oak barriques for a period of 18 months
